Let the summer dessert frenzy commence! So today, I wanted to share with you this healthy and moist avocado-lime cake I made. It’s completely raw/vegan/gluten-free, but not taste free ;) If you’re wondering what a cake with avocado would taste like? ……. think delicious ……. with a slight, just a slight, essence of ……. lime! Is it green? Nope, check out the photo below – looks like your everyday yellow cake, right? And that’s what it tastes like, it’s just a whole lot better for you!
100 g ground almonds (or any other nuts)
100 g dried dates (or plums, apricots..)
¼ dl water
80 g extra–virgin coconut oil (or coconut butter if not available)
300 g avocado meat (2 big avocados)
80 g raisins
lime zest of 2 limes
lime juice of 1 ½ limes
2 tbsp (=tablespoon) maple syrup
How to make it:
To make the base, combine ground almonds, dried dates and water in a food processor and process until the mixture starts to come together when squeezed. Add 1 teaspoon of water if the mixture is too crumbly. Press into your pans of choice. Set aside.
For the filling, combine avocado, raisins, lime juice and zest and maple syrup in blender (or food processor) and process until smooth. With the motor running, slowly add the coconut oil and process for a minute. Pour the mixture over the base. Chill in the fridge until firm (about 2 hours or so).
